Tuna Spinach Sandwiches

1 can light tuna, canned in water1.5 oz part-skim mozzarella cheese21 fresh spinach leaves1 can diced tomatoes with green chilies3 whole wheat thin buns
Drain tuna and diced tomatoes, and break up into a bowl. Mix together.
Separate thin buns (or you can use whole wheat tortillas) and add about .5 oz mozzarella cheese. Microwave until the cheese melts.
Spoon about 1/3 of tuna/tomato mixture onto half of each thin bun. Top with about 7 spinach leaves. Top with the remaining bun halves, and enjoy!
Makes 3 sandwiches.
