Amanda's Stuffed Peppers with Bison and Quinoa

Ingredients
1 lb ground bison5 large bell peppers2 cloves garlic1 medium onion2 eggs1 oz goat cheese1 cup of quinoa (pre-cooking-4 servings)EVOOSeasonings-dried basil, black pepper, and salt to taste
Directions
Cook quinoa in water in rice cooker

Cut tops off bell peppers and take out seeds/veins

Brown bison with 1 medium chopped onion in 1 T of EVOO

Par boil peppers (5 min)

Mix all of quinoa with bison/onion/garlic mixture (season to taste)

Add goat cheese and stir (let cool)

When cool, add 2 eggs to mixture and mix well

Fill each half of a bell pepper with a heaping scoop

Baked stuffed peppers for 15 min at 350

1/2 pepper with stuffing is a serving

Serving Size: makes 10 serving of 1/2 pepper with filling
