Ingredients
Directions
Chicken Breast, no skin, 2 breast, bone and skin removed Chicken Broth, 1 cup (8 fl oz) Olive Oil, 2 tbsp Angel Hiar Pasta, 8 oz Broccoli, Cauliflower, and Carrots, 3 cup Parmesan Cheese, grated, .25 cup Seasoning to taste (I use Morton's Seasoning Salt)
Cook pasta according to directions on package. Cut chicken breast into bite sized pieces. Add olive oil to skillet and cook chicken until done. (About five minutes) Remove chicken from pan and add mixed vegetables. Cook vegetables in one cup chicken broth for about 2 minutes then add chicken back to pan. Add parmesan and seasonings and let cook until vegetables are done. They should have a bright color and be firm.
Everything will be done at the same time if you start the pasta before you start the chicken.
