Chicken Poached in White Wine with Tomatoes

Ingredients
1 lb boneless skinless chicken breast, cut in to 4 portions of 4oz each1 Onion, sliced2 cloves Garlic, minced2 Tomatoes, chopped1 cup dry White Wine1 cup WaterPinch of cayenne, or more to taste1/8 tsp Salt, or more to taste
Directions
1. Heat a large skillet over medium heat and coat with cooking spray.
2. Add the onion and cook for 5 minutes. Add garlic and cook another 5 minutes.
3. Add tomatoes, wine, water, cayenne and bring to boil
4. Add chicken and cover with tomato mixture. Bring to boil. Reduce heat to low and simmer 5 minutes. Add salt and serve immediately.
