Vege "Meatloaf" Muffins

Directions
Boil 1 sweet potato and 2 carrots together in a pot. Finely mince or process 2 large cloves garlic, 1 onion, 1 large stalk of celery and one can of chili beans. Add 2 T fresh herbs, 2 T tomato paste, 3 T sweet chiili sauce, salt, pepper and 1/4 GF rice crumbs. Mash cooked kumara and carrot and add to mixture. Put into muffin tins and bake at 200C for 20 minutes :)
