Pasta with Roasted Tomatoes and Lemon Cream Sauce

3/4 c lemon cashew cream9 oz quinoa noodles4 c cherry tomatoes, halved1.5 tbls olive oil1/4 c capers1/4 cup chopped oregano
Cook pasta per package directions.
Preheat oven to 375*. In a glass 9x13 pan, drizzle with oil. Add tomatoes, capers, and salt and pepper. Roast for 30 minutes.
Add tomato mixture to cooked and drained pasta and stir in cashew cream and oregano.
Serving Size: makes 4 1.5-cup servings
