2 large baked potatoes2 eggs1/4 cup shredded cheese2 slices turkey baconchives (optional)buttersalt and pepper
1. Preheat the oven to 350F
2. Carefully cut off the top third of the potato (lengthwise) and even more carefully hollow out the inside. You want enough room to be able to stuff all your fillings and the egg, but still leave a thick enough outer layer so you don’t pierce through it.
3. Put some butter in the opening and season with salt and pepper. Add whatever fillings you like (cheese, bacon, chives). Make sure you leave enough room for the egg.
4. Carefully break the egg into the potato. Make sure you don’t pop the yolk. Season with salt and pepper. Top with more cheese.
5. Bake until white is set. 20 minutes for a still runny yolk, 25 for a more solid one
