Good Housekeeping Blueberry Muffin Recipe

Ingredients
1 3/4 cups of whole wheat flour1/3 cup of sugar2 tsp baking powder1 beaten egg3/4 cup skim milk1/4 cup olive oil1 1/2 cups frozen or fresh unsweetened blueberries (I use Wyman's frozen).1 tsp lemon extract
Directions
combine dry ingredients in a large bowl, add in egg milk and oil and mix until just combined. Mixture will be lumpy. Then fold in blueberries. Lightly grease baking pan or use paper baking cups. Bake 20 minutes in 400 degree oven
