West African Egg Stew

Ingredients
1 can tomato paste (6oz)1/2 cup vegetable oil1/2 cup onion diced2 tbs grated ginger6oz bay shrimpsalt, pepper, garlic powder4 eggs
Directions
In a stew pot over medium heat, fry tomato paste in oil until it starts to break up. Add the onion and cook until softened. Add grated ginger and shrimp. Simmer on medium low for 30 minutes. Beat eggs in a bowl, add to the stew pot. Stir until egg has cooked. Serve with baked plantains or steamed rice.
