Chicken Liver Pate

Ingredients

Chicken Livers, 450 grams Butter, unsalted, 2 tbsp Garlic 1-2 clovesTawny Port (per ounce), 1 oz (or to taste) OR Brandy (not both!!)Rosemary, 1 tsp Fresh sage, 2 tbsp (you can use dried if you prefer but use less!!)
Melt butter
Add washed livers (cook 5 mins)
Add crushed/chopped garlic (cook 1 min)
Add herbs (to taste) (cook 1 min)
Add port and cook for 3-5 mins until livers are not pink.
Cool slightly
Blend until desired consistency, add salt to taste if needed.
Put into ramekins and chill (will make appx 2 half filled ramekins)
Serving Size: Serves 6 as a starter
