Lissy's Israeli Couscous Salad

2 Large Ripe Tomatoes peeled & diced1 Small Red Onion minced1 Garlic Clove minced or pressed1 oz or 1 Jalapeno minced1 tbsp Cilantro1 tbsp White Wine Vinegar15 Greek olives sliced3 oz reduced fat Feta Cheese Crumbles3 servings Israeli Couscous
Prep vegetables. Peel & Dice tomatoes, removing seeds. Mince garlic, onion & jalapeno. Slice olives. Combine in medium sized bowl, add cilantro and white wine vinegar. Set aside.
Prepare Israeli Couscous to package directions. Strain and run under cold water until couscous is cool to the touch. Add to to Vegetable bowl. Sprinkle in Feta Cheese.
