Cornmeal Pancakes

Ingredients
1 c yellow cornmeal2 tbsp honey1 tsp salt1 c boiling water2 tbsp unsalted butter, melted1/2 c milk2 tsp baking powder1 egg1/2 c all-purpose flour
Directions
In a large bowl, combine the cornmeal, honey and salt. Slowly stir in 1 cup of boiling water; combine, cover and let sit for 10 minutes.

Add the milk, baking powder and butter. Whisk until combined.

Add the eggs and whisk until combined.

Add the flour and whisk until just combined.

Drop by 1/4 cupfuls onto a hot griddle; when the edges are dry and bubbles are breaking, turn them over and cook until they're done.

Share and enjoy.

    Very good recipe. I used wholewheat flour, Lighter than I expected but yet very filling. Even my picky eaters liked these pancakes will be come one of my regular Sunday breakfast. - 6/4/11
