Corn Muffins

Ingredients
1 c. yellow corn meal (stone ground), 1 c. plain flour, 1 tbsp sugar, 1 tsp. salt, 1 tbsp. baking powder, 2 eggs, 1 1/4 c. milk, 2 tbsp. oil
Directions
Preheat oven to 425. Sift dry ingredients. Beat eggs, milk, and oil in a separate bowl. Add to dry ingredients. Beat gently until thoroughly mixed. Pour into greased muffin pan. Bake for 15-20 minutes or until down. Makes 12 servings.
