Pizza Rolls

Ingredients
4-1/2 teaspoons active dry yeast4-2/3 cups water3-1/2 cups wheat flour3-1/2 cups white flour1/4 cup olive oil1 tablespoon salt1 tablespoon sugar1 cup mozzarella cheese144 slices of pepperoni
Directions
preheat oven to 350 degrees. mix yeast and warm water. Let set until yeast is dissolved (about 5 minutes). add wheat flour, salt, sugar, and olive oil and mix until well combined. Add white flour 1/2 cup at a time until dough is smooth and elastic. let rise in an oiled bowl covered with a damp towel for 1-1/2 hours our until about double. Divide dough into 16 equal portions. Roll out into an 8 inch rectangle. arrange 9 slices of pepperoni in a 3x3 square in the middle of the rectangle allowing about 1 inch around the edges. add 1 tablespoon of mozzarella cheese and roll into a log, sealing the ends. bake in a greased 9X13 pan for 20 minutes or until golden brown.
