Paleo Omelette Muffins

6 eggs2 scallions1 red bell pepper1 cup (or approx. 185 g) - raw, extra lean ground beef sirloinThis recipe is very flexible - you can add many different variations of veggies and meat (mushrooms, spinach, ham, tomatoes, etc). Cheese isn't allowed on the Paleo diet but these would be great with feta, cheddar or mozarella added in as well.
Preheat oven to 350 degrees C.
Brown the meat.
Whisk together 6 eggs in a bowl.
Dice the red pepper and the scallions.
Grease 6 muffin wells. Add everything together and distribute evenly into the muffin tin.
Bake for 35 minutes.
Serving Size: Makes 6 "muffins"
