Baked Sirloin and Veggie Meatballs

Ingredients
500g of extra lean ground beef sirloin, raw1 red bell pepper4 scallions5 large mushrooms1/2 cup chopped carrotsparsleysalt and pepperitalian seasoning
Directions
Preheat oven to 350.
Combine bell pepper, mushrooms, carrots, green onions and seasonings (add generous portions to keep the meatballs from turning out bland) in a food processor and blend until well chopped.
With the ground beef in a large bowl, mix in the chopped veggies.
Form meatballs (a little bit bigger than a golf ball) on a non-greased baking sheet and bake at 350 for about 25 minutes (test to be sure they are fully cooked through).

    The taste is good, the texture is difficult. Because blended vegetables (esp. onions) add so much moisture, the mixture becomes hard to handle. Drain the chopped vegetables well, even though this steals vitamins. Not good for boiling in spaghetti sauce, but they bake and fry well - great for frikade - 2/2/20
