1 c. whole bran cereal (Kellogg’s All Bran)2 c. granola (Quaker 100% with dates and raisins)1 c. boiling water3 Tbsp. olive oil.25 cup plus 1 Tbsp apple sauce4 eggs beaten1 c. buttermilk (1 tsp. lemon juice to 1 c. milk)2 1/4 tsp. soda1 t. salt1 1/2 c. sugar2 1/2 c. flour.5 cup raisins.5 cup apricots dried chopped.25 cup chopped walnuts
Pour boiling water over Bran and let stand. Mix sugar and oil well in big bowl, then beat in eggs and buttermilk, add we bran and remaining ingredients. I like to put the chopped fruit into the flour first so that it doesn't clump together when mixed. Batter can be frozen. Will keep in fridge for 6 weeks. Bake 400 degrees 15 - 20 minutes. Voila..
