Sesame Mango Salmon Filet

Ingredients
1 lb. Atlantic Salmon filet in 4 portions0.5 C. Low Sodium Soy sauce 2 T. Honey3 Cloves Garlic, grated or finely minced1" (about 2 t.) Ginger Root, grated1 T. Shallots, grated 1 t. Sesame Oil2 t. Olive Oil1 T. Rice wine vinegar0.5 t. Hot Pepper Flakes (optional)2 C. Mangos, cubed
Directions
Combine soy sauce, honey, garlic, ginger, shallot, sesame oil, olive oil, vinegar (and pepper flakes, if using) in a zip-top bag. Season with black pepper and add salmon filet portions and and seal the bag, removing as much air as possible. Arrange filets in a single layer and place on a dish in the refrigerator for 30 minutes to 1 hour.

Remove filet from marinade and retain the marinade. In a hot skillet, add a small amount of oil. Cook salmon filet on medium-high for 3-4 minutes per side. Once you've put the filet in the pan, try not to move it until you're ready to turn it over, to allow it to form a sear. Remove salmon to a plate and tent lightly with foil. Add mango and marinade to the pan and bring to a boil. Reduce to a simmer and cook until mango is hot and tender and marinade has reduced and thickened slightly. Serve 0.5 C. mango and glaze over each salmon portion.
