Shrimp, cooked, 4 ozVermont Sugar Free Low Calorie Maple Syrup, 1 tbspGarlic, 1 clove Tropicana, Lite’n Healthy Orange juice, 5 tbsp*Soy Sauce, 1 tbsp and 1/4 tspOlive Oil, 1 tbsp and 1 tspCucumber (peeled), 1/4 cup, pared, chopped Red Ripe Tomatoes, 1/2 cup, choppedWhole Grain Quinoa, (1 serving =1/4 cup dry)
Marinate shrimp in 3 tbsp orange juice mixed with 1 tbsp maple syrup, 1 tsp reduced-sodium soy sauce, 1 crushed garlic clove for 30 minutes.
Drain shrimp; sauté in 1 tbsp olive oil, about 5 minutes per side.
Serve with quinoa tossed with 1/2 cup chopped tomato, 1/4 cup chopped cucumber, 2 tbsp orange juice, 1 tsp olive oil, 1/4 tsp reduced-sodium soy sauce.
