Twice Baked Potato Casserole

Ingredients
2 lbs red potatoes, cubed4 oz cream cheese1/2 C. sour cream 1/2 C. ranch dressing2 C. cheddar cheese1 teaspoon each: kosher salt, pepper, and garlic powder*optional: cooked and chopped bacon - not included in calorie count*
Directions
*PREHEAT OVEN TO 350*
1. Cube Potatoes and boil until fork-tender. Drain and mash in baking dish.
2. Add in all other ingredients EXCEPT for cheddar cheese - Only add in 1 cup of cheddar cheese and stir to combine.
3. Top mixture with remaining 1/2 cup of cheese.
4. Bake @ 350 for 15-20 minutes until cheese on top is melted.
