Aloha Chicken

Ingredients
2 lbs Chicken Thighs1/2 tsp Ground Ginger1/2 tsp Paprika1/2 tsp Onion Powder1 T Garlic salt1.5 T cider vinegar1/2 C Catsup2 T soy sauce2 T packed brown sugar 2 C crushed pineapple in juice
Directions
Heat oven to 400 degrees. Arrange chicken in a single layer in a well greased 9 x 13 inch pan. In a small bowl mix together spices and vinegar. Brush half of mixture over chicken.

Bake chicken 15 minutes. Turn pieces, then baste with remaining spice mixture. Return to oven for another 15 minutes.

Combine catsup, soy sauce, pineapple and brown sugar. Spoon over chicken, return to oven for 30 more minutes. Serve hot.

    I made this with a few substitutions, white meat instead of thighs, canned no sugar added pineapple chunks, apple cider vinegar, garlic powder instead of garlic salt and low sodium soy sauce. It was so good, thanks so much for sharing. - 3/13/09

    I tweaked it a bit. A little less brown sugar and I used fresh pineapple and juice . Also, made only 10 oz of chicken but the same amount of sauce. Very, very tasty. A keeper as my husband says. Served over rice. - 5/12/08
