Chicken w/Rice Noodles (Mei Fun-esque)

Ingredients
8 oz Miracle Noodle - Rice Noodles1 cup cooked/rotisserie skinless chicken (light)1/4 cup chopped green onion2 cups frozen stir fry vegetables2 tbsp stir fry oilSauce:˝ cup chicken broth2 tbsp low sodium soy sauce**Miracle Noodles have zero net carbs. Directions
PREP THE NOODLES

Miracle Noodle Rice Noodles come in fluid-filled packs to keep them from drying out. The fluid has a fishy odor that will dissipate with proper preparation.

1) Drain the pack and put noodles into a colander.
2) Rinse with warm water for 3-5 minutes.
3) Lightly boil for 1 minute.
4) Strain and pat dry with a paper towel.

PREP THE VEGGIES

1) Rinse the green onions, dry, and chop. Set aside.
2) Microwave the frozen veggies until cooked through.
3) Drain the veggies in a colander. Set aside.

PREP THE SAUCE AND CHICKEN

1) Mix chicken broth and soy sauce together. Set aside.
2) Chop cooked skinless chicken into small pieces. Set aside.

TIME TO COOK!

Heat a pot or wok on high. Take the pot/wok off the heat briefly and carefully add the stir fry oil. (Note: Stir fry oil can be found in the ethnic section of the grocery store. It has onion, garlic and ginger infused in the oil.)

You can figure out when the oil is hot by carefully flicking some water droplets onto the pan. If they sizzle vigorously, the oil is ready.

Add the noodles and saute them for a minute, so they can soak up some flavor. Then add the chicken (should already be hot!), green onions and vegetables on top. Keep mixing everything vigorously to avoid burns and to distribute the flavor over everything.

After two or three minutes, add the sauce and toss until everything is coated.
