3B Salad - Beans, Barley & Rye Berries

1 can red kidney beans, drained and rinsed1 can garbanzo beans, drained and rinsed1/2 c pearl barley, dry and not quick1/2 c rye berries, whole berries1 c chopped celery1/2 c chopped scallions2 T olive oil1 T vinegar2 T chopped cilantro
cook rye berries and pearl barley together in 3 cups of water with a chicken buillion cube.
cook for about 50 minutes and then drain
In a large bowl, add the berries & barley, red kidney beans and garbanzo beans.
add oil, celery, cilantro, and scallions
toss and refrigerate for about 4 hours
