Awesome Egg White Omelet

Ingredients
4 egg whites1/2 cup chopped green bell pepper2 tbsp diced shallot1 garlic clove diced1/2 cup fat free shredded cheddarcoconut oil spray
Directions
Cook the peppers, shallot, and garlic in two sprays of coconut oil over medium-high heat. (You can substitute this for any cooking spray, but try the coconut! It really makes a HUGE difference in flavor!) Remove from pan.

Cook the egg whites over medium heat without touching until firm on top. Add the vegetable mixture on top of the eggs down the center. Add half of the cheese on top. Fold over the edges and cook for a few more minutes until everything is melted.

Serve with remaining cheese on top.
