Healthy Homemade Sweet and Sour Chicken

Ingredients
1 lb boneless, skinless chicken breasts1 medium onion, sliced1 bell pepper, sliced3 medium stalks celery, sliced1 cup broccoli, chopped1 (8 ounce) can crushed pineapple with juice2 cups cooked long-grain white riceSAUCE:• 3/4 cup white sugar • 1/3 cup white vinegar • 2/3 cup water • 1/4 cup soy sauce • 1 tablespoon ketchup • 2 tablespoons cornstarch
Directions
Preheat oven to 350 degrees.
Place chicken, onions, peppers, celery, broccoli and pineapple in a baking dish and bake for 30 minutes at 350 degrees.
Meanwhile, prepare the sweet and sour sauce: Place the sugar, vinegar, water, soy sauce, ketchup and cornstarch in a medium saucepan, and bring to a boil. Stir continuously until the mixture has thickened.
Remove the chicken and veggies from the oven, and remove chicken from the pan. Shred or cut the chicken in small chunks; return to pan, and mix into vegetables and pineapple. Drain off some of the juice, if desired. Add half of the sweet and sour sauce to the chicken mixture, mixing well, and return to the oven to bake for 30 minutes.
Prepare white rice.
Remove the chicken mixture from oven and fold in remaining sweet and sour sauce. Let stand to cool for several minutes. Serve over white rice.
