Canadian Spinach/Mushroom Omelette (190c)

Ingredients
Olive Oil, 1 tbspOnions, raw, .5 cup, choppedPortabella Mushrooms, 100 grams, choppedGarlic, 1 clove, mincedProvence herbs, .5 tspSalt, .5 tsp Red pepper flakes, to tasteSpinach, fresh, 1 package (10 oz) Egg, fresh, 6 large, beaten*Almond Milk w/ Calcium, .25 cup (optional)Parmesan Cheese, grated, .125 cup (or feta)Red Ripe Tomatoes, .5 cup, chopped
Directions
Spray a non-stick skillet with olive oil, heat on medium, add onions. Stir until soft, add mushrooms and cook down; add spinach in batches until cooked down. Add garlic, herbs and seasonings. Sprinkle with cheese and pour eggs over all. Stir very slightly, to get eggs under mixture. Turn heat down slightly and put on lid. cook until eggs are set.
Cut 4 pie-shaped slices and top with seasoned chopped tomatoes.
