Farro and White Bean Salad

Ingredients
1 c. cooked farro2 c. cooked white beans1 english cucumber, diced4 scallions, sliced1 red bell pepper, diced1 lg tomato, diced1 c. parsley, chopped2 T olive oil2 T balsamic vinegar1 T tamari1 T lemon juice1 T dijon mustard2 cloves garlic, minced
Directions
Cook farro according to package directions. Mix all salad ingredients. Stir together dressing and drizzle over salad, tossing to combine. Serve well, chilled.
