Asparagus and Chive Omelet

5 tbsp fresh chives2 egg whites2 large eggs6 spears asparaguspre-cooked smoked sausage (.25 of the big u-shaped link)1 slice tilamook pepper jack cheese
Pre-heat your omelet pan on med-high heat. Chop chives into quarter inch rings and half inch sprigs. Break the woody ends off the asparagus and cut into inch long sections. Add a bit of cooking spray to the pan, sautee the sausage, asparagus and chive rings until sausage is browned and veggies are tender. Remove from pan into a holding bowl.
Clean pan, re-heat. Beat eggs, chive sprigs, dash of salt and pepper as preferred. Make sure the pan is good and hot, add your cooking spray, and then the eggs. Cook until golden brown on the bottom, flip, add filling and slice of cheese. Fold over once cheese is melted, and serve.
