Chilled Cucumber Soup with Mint

Ingredients
3 Large Cucumbers, peeled.1 cup plain yogurt. [I used Greek.]1 T. Extra-Virgin Olive Oil2 t. Red Wine Vinegar1 T. Fresh Chopped Mint1 Garlic Clove, peeled.1 t. Coarse Sea SaltBlack Pepper
Directions
Halve the cucumbers lengthwise. Scoop out seeds and discard. Chop coarsely and transfer to blender or food processor.

Add remaining ingredients and blend until smooth. Chill until ready to serve.
