Dhal Makhani

1 c dried lentils15 oz can tomato sauce1 T grated fresh ginger6 cloves garlic, minced1/2 - 2 tsp cayenne pepper (to taste)2 T butterwater (up to one cup)3 T half and half
Put the lentils in a pot, cover with cold water by 2 inches, and bring to a boil over high heat. Once it starts boiling, decrease heat to medium high, cover pot, and cook for 20 minutes.
After 20 minutes, the lentils should be soft but not mushy. Drain them in the sink and then return to pot and add tomato sauce, ginger, garlic, cayenne, and butter. Cover the pot and turn the heat on low.
Cook for one hour, stirring occasionally and adding water (up to one cup) when needed. I stirred 4 times but did not need to add water.
Now adjust seasoning.
Stir in half and half and serve over rice.
