Ingredients
100g wholewheat flour100g plain flour2 treaspoons of ground cinnamonpinch of salt1/2 tea spoon of bicarbonate of soda3 teaspoons of baking powder2 table spoons of agave nectar (or black strap mollasses can be used)150ml of 1% milk1 large eggzest and juice of 1 orange1 tablespoon groundnut (or other vegetable) oil2 small grated apples1 large grated carrott2 tablespooons of dried apicot (or use other dried fruit)1 table spoon of agave nectar or honey for drizzling over the muffins after cooking
Directions
preheat oven to 200 celius (190 for fan)
sieve the flours together, also the cinnamon, bicarbonate of soda & baking power into a large bowl.
in a separate jug mix the milk, egg, orange juice, groundnut oil & agave nectar with a woden spoon.
pour the liquid mixture over the dry mixture and combine them together lightly.
gently stir in the grated apple, grated carrott,
