Lamb madras (Patak's curry paste)

Ingredients
lean lamb diced, chopped onion, chopped peppers, canned tomatoes, tomato puree and madras curry paste.
Directions
fry the onions in 2 tsp oil until transparent, then add the paste and cook for a couple of minutes. Then add the peppers and finally the lamb. When all lightly browned and coated in the sauce add the tomatoes and puree. Add about 1 can of water, bring to the simmer and cook on a low heat for 2 hours to develop the flavour. Great served with low fat yoghurt raita and an aubergine side dish.
