Indian Mixed beans

Ingredients
2 tbs olive oil1 cup chopped onion1 tsp cumin seeds2 tsp grated ginger1 chili chopped2-3 cups tomatoes, grated or chopped3 cans of beans (any that you like)
Directions
heat oil, cook onions until golden, add cumin seeds for a minute, add garlic, ginger, chopped chilies. cook a couple of minutes, until fragrant. add grated tomatoes (or canned). add coconut milk. rinse beans and add to sauce. add water to thin to desired consistency. cook for 20-30 minutes and then add chopped cilantro.
