1 lb Boneless Skinless Chicken Breast3 Cups Minute Brown Rice1 Can Campbell's Healthy Request Cream of Mushroom Soup1 Can Campbell's 98% Fat Free Broccoli and Cheese Soup12 oz Mt. Olive Diced Jalapenos, Rinsed and Drained8 oz Can of Mushrooms, Drained16 oz Bag Frozen Broccoli, Thawed.4 Tbsp Smart Balance Omega Plus Spread, Melted.5 Roll of Reduced Fat Ritz Crackers, Crushed
Pre-Heat oven to 350. Cook Chicken and cut into bite sized pieces. While cooking, cook rice according to directions on box. Mix Together Cooked Chicken, Rice, Thawed Broccoli, Both Soups, Mushrooms, and Peppers. Pour into a Sprayed 9x13 baking dish and cook for 30 minutes. While Casserole is cooking mix together Crackers and Buttery Spread. When done, cover casserole with Topping and bake 5 minutes more.
