Vegan Lentil Veggie Salad

*French lentils, 1 cup drybrown rice (1 cup cooked),Hearts of Palm, 1 cup sliced *Bell Pepper - Red - 1 large choppedCherry Tomatoes- 1/2 cup sliced in halfCucumber (peeled), 1 large seeded and choppedBroccoli, 2 cups choppedParsley, 1 cup choppedOlive Oil, 3 tbsp Limes, 1 fruit juicedDijon Mustard, 1 tbspgarlic, 1 clove minced *Balsamic Vinegar, 1 tbsp salt and pepper to taste
Cook the french lentils (I cook mine in veggie broth). Make sure to use French lentils, they hold their shape and don't get mushy.
Put all veggies in a large bowl, add rice and lentils
Mix olive oil, lime juice, mustard, garlic, vinegar, salt and pepper (I put in container with lid and shake till emulsified). Pour dressing over salad and mix well.
Enjoy!
