Barbecue Beef Pizza on the Grill

To Prepare Beef:
Can be done several ways, in advance. Add roast to crock pot with a cup of sauce (see recipe below) and a can of beer. Or wrap in foil with sauce and grill for up to 3 hours.
Once beef is tender, shred with two forks and add sauce to reach a good consistency for barbecue beef according to your personal preference.
For Dough:
Note: If you don't want to, or don't have time to make the dough from scratch, frozen pizza dough works very well too.
Pour water into a medium bowl and sprinkle yeast on top. In another medium bowl, combine salt and flour. While mixing, drizzle in olive oil just until combined. Gently stir yeast and water, then drizzle mixture into flour all the while gently mixing. Stir until a dough ball forms. Dough will be sticky and wet.
Drizzle a little olive oil into a clean medium sized bowl and tip bowl to coat. Place dough in bowl, and toss until dough is coated with oil, be sure to flip the dough over. Cover with a damp kitchen towel and place in a warm place for two hours.
When dough is ready, drizzle a little olive oil on a pizza pan and stretch dough thinly across pan.
For Sauce:
While dough is rising, heat a saucepan with 1 tbsp olive oil and saute onion and garlic until onion is cooked. Add tomato sauce, brown sugar, vinegar, and liquid smoke to taste. Sometimes I'll add a little beer in just for kicks. Heat through.
To assemble pizza:
Spread approximately one cup of sauce over dough. Top with beef then cheese. Add preferred other toppings.
Fire up the charcoal. When coals are quite ashy, spread them out. Add pizza to grill and cook for 10-15 minutes. Watch pizza very closely, it is easy to burn if you're not careful. You want the grill to be hot, but not too hot!
Slice pizza and enjoy! You'll be in heaven for sure!!
