Pork Satay with Peanut sauce

2 TB. SATE SEASONING1 TB. ROGAN JOSH4 TB. water2 lbs. pork tenderloin3 TB. reduced sodium soy sauce3 TB. peanut oil1 TB. sesame oil2 TB. rice vinegarLime wedges for garnish20 wooden skewers Spicy Peanut Sauce:1/2 Cup peanut butter1 TB. reduced sodium soy sauce1 clove garlic, pressed (1/4 tsp. GRANULATED GARLIC1 tsp. grated fresh ginger (1/4 tsp. GINGER POWDER)1-2 jalapeņo peppers, seeded chopped1/2 tsp. chili oil (1/2 tsp. vegetable oil plus 1/4 tsp. CAYENNE PEPPER or HOT CHILI POWDER)1/2 tsp. sesame oildash CAYENNE PEPPER (optional)dash BLACK & RED SPICE (optional)water or rice vinegar to thin
Combine the SATE SEASONING, ROGAN JOSH and water in a medium bowl and let sit for about 20 minutes. Cut the pork into 1-inch cubes. Add the meat and remaining ingredients to the bowl and mix well. Cover and marinate in the refrigerator for at least 2 hours.
Soak the wooden skewers in water for 10 minutes. Thread about 4-6 cubes of pork onto each skewer, leaving a slight space. Grill about 7 minutes per side. Lightly baste with chili oil when turning. Serve with Spicy Peanut Sauce.
For the Spicy Peanut Sauce: Combine all of the ingredients in a bowl and mix well. Add water or rice vinegar, a drizzle at a time, to thin to the consistency you desire.
Prep. time: 30 minutes plus 2 hour marinating time
Cooking time: 15 minutes
Serves: 4-6
Serving Size: 2 skewers per person (~4oz pork each + 2tbs sauce)
