Spinach, Apple, Walnut Salad with Balsamic Vinaigrette

Ingredients
1 package baby spinach leaves2 medium apples, chopped into bite-sized pieces1/8 cup red onion, chopped fine1/4 cup chopped walnuts2 oz/ 60g light cheddar cheese3 Tbsp olive oil4 Tbsp balsamic vinegar1 tsp brown sugar1 clove garlic, minced/crushed1/4 tsp salt1/4 tsp ground black pepper
Directions
Combine salad ingredients in a large bowl. Combine oil, vinegar, sugar, garlic, salt and pepper in a small container with a tight seal. Shake until well combined. Pour over salad and toss to coat.

Serving Size: makes 6 servings (about 1 1/4 cup each)
