Pork Carnitas

3 lb. Pork Shoulder (pork butt, picnic roast) cut into bite-sized pieces3 cups of water (or enough to cover pork in a large frying pan)Lime Juice, 1 lime Pepper, black, 1 tbsp Salt, 1 tsp
Cut pork into bite-sized pieces and place in large skillet or straight-edged frying pan. Add enough water to full cover pieces of pork.
Cook on medium heat until water evaporates (45-60 minutes). Once water is gone, brown meat a little. Add salt & pepper (to taste). Squeeze fresh lime juice over meat.
Serve in tortillas with your choice of toppings.
