Heat olive oil in dutch oven.
Chop all veggies (except spinach) and add to pan.
Cook until veggies are tender.
Add spinach and wilt.
In a separate pot, bring 1 cup of chicken (or vegetable) broth along with 1 1/4 cup water and quinoa to a boil.
Reduce heat, cover, and simmer 10-15 min (or until all liquid is absorbed)
Remove quinoa from heat, fluff, and allow to sit for 5 min.
Mix quinoa with veggies.
Sprinkle with parmesan cheese
Salt & Pepper to taste.
