Spicy Spinach Dip

1 pkg (10 Oz) frozen chopped spinach, thawed + drained8 oz light cream cheese, softened2 cups hot salsa1 Tbsp red wine vinegar1 tsp hot sauce1 cup reduced fat mexican blend cheddar cheese1/4 tsp salt1/4 tsp black pepper
Squeeze and excess water out of spinach. In a mixing bowl, combine spinach and cream cheese. Stir in salsa, vinegar and hot sauce. Add cheeses, olives, salt and pepper.
Transfer to an oven safe bowl and bake at 400F until bubbly. (I usually check it at about 12 minutes, give it a stir to make sure it all melts well, and then bake it another 3-5 minutes.)
Serve warm, with tortilla chips.
