Easy Chicken stew

* Chicken Breast, no skin, 4 breast, bone and skin removed * Carrots, raw, 2 cup, chopped * Onions, raw, 1 cup, chopped * Green Peppers (bell peppers), 1.5 cup, chopped * Garlic, 6 clove * Potato, raw, 2 cup diced * Chicken Broth, 4 cup (8 fl oz) (homemade) * Flour, white, .5 cup * Milk, 3.25%, 3 cup thyme, parsley, salt, pepper to taste
prepare vegetables by chopping into 3/8" dice
dice chicken into 1/2" cubes, saute in 2 Tbs olive oil until cooked through
remove chicken to bowl
Add vegetables and remaining olive oil and cook until tender
Return chicken to pot, add flour and stir until combined
Add broth, milk and seasonings and simmer on med heat about 30 min until vegetables are tender and broth is thickened.
