Bruschetta on Sour Dough

2 Tomatoes - diced and de-seeded5 Basil Leaves - sliced1 tsp of Garlic infused(or add minced garlic to your olive oil)1/2 Tsp of Balsamic VinegarSalt & Pepper to taste1 baguette - sliced thin (I used sour dough bread) 1 1/2 Tbsp Olive Oil - Garlic infused(or add minced garlic to your olive oil)1 1/2 Tbsp.of Parmesan Cheese
In a small bowl add your tomatoes, basil,1 Tsp of Olive Oil, balsamic vinegar and salt & pepper to taste. Mixed together and set a side.
Cut bread into thin slices and with a pastry brush rub the 1 1/2 Tbsp of olive oil onto each side of bread. Grill the bread until toasted.
Top each slice of bread with tomato toppings and a sprinkle of Parmesan Cheese.
