Lean Ground Beef Enchiladas

5- Mission 96% Fat Free while Wheat Tortillas1- 1.62oz packet Lawry's Enchilada Sauce (Spices and Seasoning.1 can Contadina Tomato Paste w/ Roasted Garlic1-pound lean ground beef (93/7)1 cup Non-Fat Cottage Cheese1-cup Kraft 2% Shredded Cheddar Cheese
1. Preheat oven to 350 F. Mix water, tomato paste and Spices and Seasonings in 2-quart saucepan. Bring to boil. Reduce heat to low. Simmer, uncovered, 10 minutes. stiring occasionally.
2. Brown ground beef in large skillet on medium-high heat. Drain fat. Stir in 1 cup cottage cheese.
3. Pour 1 cup of the enchilada sauce into an 8x8 baking dish. Coat each tortilla in remaining sauce. Spoon beef mixture down center of each tortilla. Fold over tortillas sides. Place seam-side down in baking dish. Spoon remaining sauce over enchiladas.
4. Bake 15 minutes. Sprinkle with 1 cup cheese. Bake 5 minutes longer or until cheese is melted.
Serving Size: Makes 5 servings.
