Apple Cole Slaw

Ingredients
1 head of green cabbage, shredded20 baby carrots, shredded (or 2 .5 cups total)4-5 apples, mix of red and green, shred or dicejuice of 2 lemons1/2 cup mayonnaise (light or nonfat if preferred)
Directions
Shred all vegetables and fruits (I used my food processor). In separate bowl whisk together lemon juice and mayonnaise. Pour dressing over shredded veggies, toss to coat. Add salt if desired.
