Mesa Grill Southwestern Potato Salad

Ingredients
1.5 c prepared light mayo1/4 c Dijon mustard2 T fresh lime juice2 T chipotle pepper puree1 large ripe tomato, seeded and diced1/4 c chopped cilantro3 scallions, chopped (white and green parts)1 medium red onion, thinly sliced1/2 t cayenne4 cloves garlic, mincedsalt and fresh ground pepper16 new potatoes (about 3-4 pounds), cooked, drained and sliced 1/2-inch thick
Directions
Combine all ingredients, except potatoes, in a medium bowl and season with salt & pepper to taste. Place warm potatoes in a large bowl and pour the mixture over potatoes and mix well. Season again with salt & pepper, to taste.
