2 1/4 lb lean ground beef (sirloin)1 large onion finely choppedKosher salt & freshly ground peppersmall rolls or slider bunspickles, Ketchup & mustard for topping
Form the meat into 36 golf ball-sized balls. Finely chop onion. Heat a cast-iron skillet over high heat. working in batches, add the meatballs to the skillet and smash them with a spatula. Season with salt, pepper and onion. Cook one minute. Flip & cook one more minute. Set buns on top for a few seconds. Serve on buns topped with pickes, ketchup and mustared.
