Banana Split Desert

Ingredients
2 pkgs. low-fat graham crackers2 boxes sugar free banana flavored nonfat pudding mix4 1/2 c. non-fat milk1 16 oz can crushed pineapple, in its own juice, drained3/4 c. fat-free whipped topping, thawed2 bananas, sliced2 c. sliced strawberries1 box sugar free, fat free chocolate pudding mix2 tbsp. chopped pecans (optional)
Directions
Line bottom of 13x9 inch dish with 8 sheets of graham crackers. set aside.

In medium size bowl Mix chocolate pudding with 1 1/2 c skim milk, mix well pour over bottom layer of graham crackers.

Slice bananas and cover chocolate pudding. Add second layer of graham crackers 8 sheets.

In large bowl combine banana pudding mix with 3 cups skim milk, mix well and let sit for 2 minutes.

Stir in drained crushed pineapple, then fold in whipped topping.

Pour over graham crackers. Top with sliced strawberries.

Refrigerate for at least 6 hours. Garnish with chopped pecans, add additional touch of whipped topping and chocolate syrup or hot fudge if desired. This is not figured into the nutritional content.

    My family has made something similar this since I was a little kid! In my family we call it Eclair Cake. It was always fun to try new pudding flavor combinations. I look forward to trying your idea of mixing some fruit in as well. - 7/16/11
