ChefKatie's Thin Mint Truffles

Ingredients
2 sleeves (1 box) girl scout thin mint cookies1 (8 oz) package reduced fat cream cheese1 tsp vanilla extract1 cup dark chocolate chips
Directions
In food processor, pulse cookies until consistency of bread crumbs. Add cream cheese. Process until smooth. Add vanilla. Use scooper to scoop out balls on to baking sheet lined with parchment paper. Let set in fridge for 30 minutes. Meanwhile melt dark chocolate chips in double boiler. Let cool for about 10 minutes. Place into piping bag fitted with small tip or place in sandwich bag with one corner cut off about 1/16 of an inch up. Drizzle over cold mint balls. Let chocolate set on balls in fridge for another 15 minutes.
