Brown Rice Crispy Treats

Ingredients
1 tsp canola oil 1 cp brown rice syrup2 Tbsp natural peanut butter, almond butter, or tahini2 tsp vanilla or almond extract6 cps natural brown rice crispy cerealOptional Additions: 1/2 cp peanuts 1/2 cp raisins or currants 1/2 cp chocolate chips
Directions
Heat oil in large saucepan over medium heat. Add rice syrup and nut butter. Stir and heat until bubbles form. Take off heat and mix in vanilla.

Add cereal and mix well with spatula. Stir in optional items (peanuts). With slightly wet hands, press mixture into oiled 9 x 13 inch pan. Let set to room temperature. Slice and serve.

    Love these! I didn't have brown rice syrup so I used agave, and since I didn't need a lot, I just halved the recipe and put in a small 6 by 6in pan lined with parchment. I will make these again! - 6/15/12
